Kale Salad with Garlic Scape Paste

Fresh, simple, and full of seasonal flavor, this kale salad is made with a green garlic scape paste that brings a mild, fresh garlic flavor to every bite.

It’s an easy way to enjoy two early-summer market favorites: fresh kale and garlic scapes.

Use This

  • 1 bunch fresh kale

  • Green garlic scapes

  • Olive oil

  • Salt, to taste

Do This

  1. Remove the kale leaves from the tough stems and tear into bite-sized pieces.

  2. Roughly chop the garlic scapes and blend with olive oil in a food processor until a smooth paste forms.

  3. Massage the garlic scape paste into the kale for 2–3 minutes, until the leaves soften and become tender.

  4. Season with salt to taste.

  5. Serve at room temperature.

Tip: This simple salad gets even better after sitting for 15–30 minutes, allowing the flavors to meld.
