Mojito Mint Iced Tea with Maple Simple Syrup

Yields 1 Quart - Serves 2
Vegan, Gluten, Grain, Soy and Dairy Free


Ingredients (Tea)

1 bunch (2.5oz) fresh mojito mint leaves (washed and rough chopped)

5 cups boiling water

Handful of Ice

Instructions

  1. In a medium-large pot, over high heat, add mint leaves and water; cover and bring to a boil. Remove from heat and steep 20 minutes; allow to cool, strain and squeeze.

  2. To serve, fill glass with ice; add cooled tea and mix in desired amount of honey simple syrup; stir.

  3. Alternatively, you can drink it warm – just skip the ice.

Ingredients (Maple Simple Syrup)

2 tablespoons maple syrup

2 tablespoons warm, steeped tea

*You can make any amount of simple syrup – just use equal parts maple and tea.

Instructions

  1. In a small bowl, combine maple and warm tea.

  2. Stir until the maple is dissolved.

  3. Sweeten tea as desired. Keep leftovers in a small glass jar; keep in fridge.
