Apple Pie Overnight Oats
Yields 1 Quart
Gluten-Free, Dairy Free, Soy-Free
Vegan when using coconut oil.
Ingredients (Sliced Apples)
2 large apples, peeled and cored, cut into small pieces
2 tablespoons butter or coconut oil
2 tablespoons maple syrup
½ teaspoon sea salt
½ teaspoon cinnamon
½ teaspoon pumpkin pie spice
Ingredients (Overnight Oats)
1½ cups quick cooking oats
¼ cup hempseeds
2 tablespoons chia seed
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
½ teaspoon sea salt
2 cups oat milk
3 tablespoons maple syrup
Instructions
Melt butter in a medium-large skillet over low-medium heat. Once melted, add apples, stir to coat, cover, and cook for 3-5 minutes, stirring halfway in between.
Raise the heat to medium-high. Add salt, cinnamon, and pie spice; stir to coat. Add maple; stir to coat.Remove from heat, set aside, and allow to cool.
While the apples cool, add oats, hemp seeds, chia, cinnamon, pie spice, and sea salt to a medium-sized bowl; mix well to combine and set aside. You're ready to continue once the apples seem cool (slightly warm is okay, just not hot).
Add milk and maple syrup to the oats; stir until combined.
Add apples; stir to combine.
Pour mixture into a quart jar, lid, and set in the fridge overnight.
Quick Tips & Info to Note
Be sure to use quick-cooking oats (not rolled oats).
You can use pears as an alternative (or a mix of both).

Hempseeds and chia seeds are high in protein.
You may want to add more milk once you’re ready to eat your overnight oats.
Overnight oats are meant to be enjoyed cold, but you can certainly heat them.
