Dilly Bean, Tomato & Cucumber Salad

A crisp, colorful, protein-packed salad bursting with fresh cucumbers, juicy cherry tomatoes, creamy white beans, and fragrant dill.

Vinaigrette Ingredients
2–4 cloves garlic, minced
Juice of 1 lemon
2 tablespoons extra virgin olive oil
1 teaspoon Dijon mustard
½ teaspoon salt
Black pepper, to taste
Salad Ingredients
2 (15-ounce) cans white beans (Great Northern, Navy, or Cannellini), rinsed and drained
OR 3 cups dried beans, cooked and cooled2 cucumbers, thinly sliced
1–2 cups cherry tomatoes, halved
2–3 tablespoons fresh dill, finely chopped
Instructions
Make the Vinaigrette
In a small bowl, whisk together the garlic, lemon juice, olive oil, Dijon mustard, salt, and black pepper until well combined. Set aside.
Make the Salad
In a large mixing bowl, combine the white beans, cucumbers, cherry tomatoes, and fresh dill.
Pour the vinaigrette over the salad and gently toss until everything is evenly coated. Taste and season with additional salt and pepper, if desired.
For the best flavor, cover and refrigerate for 15–30 minutes before serving to allow the flavors to meld.
