Toasted Oyster Mushrooms over Herb Whipped Ricotta

Use This
Mushroom Topping
1 bunch oyster mushrooms
3–4 cloves garlic, minced
1 bunch fresh thyme
Olive oil
Salt & pepper
Homemade Ricotta
1540g whole milk
80g fresh lemon juice
Heat milk to 194°F, stir in lemon juice until curds form, season with salt, then strain.
Whip the finished ricotta with:
Heavy cream (to desired consistency)
Salt, to taste
Fresh thyme
Fresh tarragon
Hot Honey
1 cup local honey
1 teaspoon crushed red chili flakes
Warm gently for 5–10 minutes. Remove from heat and allow to steep. Strain if desired.
To Assemble
Thick-cut sourdough bread
1 bunch arugula
Lemon zest
Fresh chives
Fresh parsley
Flaky sea salt
Directions
Roast oyster mushrooms with olive oil, garlic, thyme, salt, and pepper until golden and caramelized.
Prepare the ricotta by heating the milk to 194°F. Stir in lemon juice and season with salt. Strain, then whip with heavy cream, thyme, tarragon, and additional salt to taste until light and creamy.
Warm the honey with crushed red chili flakes for 5–10 minutes. Let steep before straining if desired.
Toast thick slices of sourdough until crisp and golden.
Spread a generous layer of herb whipped ricotta over each slice.
Top with fresh arugula and roasted oyster mushrooms.
Drizzle generously with hot honey.
Finish with lemon zest, chopped chives, parsley, and a pinch of flaky sea salt.
