Kale Salad with Blueberries, Cheddar & Salty-Sweet Pumpkin Seed Clusters

A hearty, flavor-packed salad featuring tender kale, juicy blueberries, sharp cheddar, crunchy maple pumpkin seed clusters, and a creamy lemon-garlic tahini dressing.

Fresh, seasonal, and perfect as a side or topped with your favorite protein.

Use This

Salad

  • 1 bunch Two Creek Farm or Willow Wisp Organic Farm kale (curly or Tuscan), rinsed, dried, and chopped small

  • 2 cups fresh Trapani Farms blueberries, rinsed and dried

  • 4 oz Calkins Creamery cheddar cheese, cut into small cubes (about blueberry size)

Pumpkin Seed Clusters

  • 1 cup raw pumpkin seeds

  • 2 tablespoons Journey’s End Farm maple syrup or Two Creek Farm honey

  • 2 teaspoons butter

  • ½ teaspoon sea salt

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon chipotle powder (optional, for a subtle kick)

Lemon-Garlic Tahini Dressing

  • Juice of 2 lemons

  • 2–4 cloves Willow Wisp Organic Farm garlic, finely minced

  • 1 teaspoon sea salt

  • 1 cup tahini, stirred until smooth

  • ¾ cup warm water

  • ¼ cup extra-virgin olive oil

  • 1 tablespoon Journey’s End Farm maple syrup

Do This

Prepare the Pumpkin Seed Clusters

  1. In a small pan over medium heat, begin to toast the pumpkin seeds, stirring occasionally or shaking the pan to prevent burning.

  2. Once the seeds are lightly toasted, add the salt, cinnamon, and optional chipotle powder. Stir or shake the pan to coat evenly.

  3. Add the butter and allow it to melt. Stir to coat the pumpkin seeds.

  4. Raise the heat to medium-high, add the maple syrup or honey, stir to coat, then remove from the heat.

  5. Spread the pumpkin seed mixture onto parchment paper and allow it to cool completely. Once cooled, chop or break into cluster pieces and set aside.

Massage the kale

Place the chopped kale in a large bowl. Add a drizzle of olive oil and massage the leaves for 2–3 minutes until they become tender and vibrant green.

Assemble the salad

Add the dressing to the kale and toss. Add the blueberries and cheddar cheese and toss again. Taste and add more salt if needed.

Finish

Top with the cooled pumpkin seed clusters just before serving.
