Frisée + Apple Salad with Apple Cider Vinaigrette

Crisp, fresh, and full of fall flavor, this simple seasonal salad brings together slightly bitter frisée, sweet local apples, shaved fennel, and a bright apple cider vinaigrette.

Featuring fresh ingredients from the Narrowsburg Farmers’ Market, it’s an easy way to make the most of the early fall harvest.

Ingredients

For the Salad

  • 1 large head Willow Wisp Organic Farm frisée, washed, dried, and torn into bite-sized pieces

  • 1 crisp Trapani Farms Honeycrisp or Pink Lady apple, thinly sliced

  • 1 small fennel bulb, shaved paper-thin

Apple Cider Vinaigrette

  • ¼ cup apple cider vinegar

  • 2 teaspoons Two Creek Farm honey

  • 1 teaspoon Dijon mustard

  • ½ cup extra-virgin olive oil

  • ½ teaspoon kosher salt

  • Freshly cracked black pepper, to taste

  • Pinch of fresh thyme leaves

Method

  1. In a small bowl, whisk together the apple cider vinegar, honey, Dijon mustard, salt, pepper, and thyme. Slowly drizzle in the olive oil while whisking until emulsified.

  2. Toss the frisée with just enough vinaigrette to lightly coat the leaves.

  3. Arrange the dressed frisée on a chilled serving platter.

  4. Layer the shaved fennel and sliced apples naturally throughout the greens.

Also Delicious Topped With

Try adding fresh goat cheese or pepitas (pumpkin seeds). Serve alongside a slice of crusty bread or sourdough for a simple seasonal meal.
